Delicious Cold Dish of Brine Pork Tongue

Prepare the pork tongue and wash it.

In a pot of cold water, bring to a boil over high heat.

Take out the pork tongue and scrape the white part of the outer layer with a knife.

Prepare chili, bay leaves, and star anise.

Add water that can submerge the tongue, chili, bay leaves, star anise, and ginger in a casserole, a bowl of light soy sauce, and bring to a boil over high heat.

Add the pork tongue, continue to use high heat, and boil again.

Turn to low heat, cook for about 1 hour, turn off the heat, and let the pork tongue soak in the soup until the soup cools.

Take out the pork tongue, let it drain, put it in the fresh-keeping box, and keep it in the refrigerator.

Tips:
The pork tongue must be purchased from a trusted pork stall. If the soup is less, stir the pork tongue when cooking and soaking.
