Donkey Rolling
1.
The prepared donkey roll is super delicious.
2.
Sift the water-milled glutinous rice flour into the container. (The key point is "must" use "water milled glutinous rice flour").
3.
Add granulated sugar (without granulated sugar, soft white sugar can be used, the taste is not much different).
4.
Add purified water (filtered water can be used if there is no purified water, tap water can not be used).
5.
Stir evenly (stir until there is no particles of glutinous rice paste).
6.
Pour the stirred glutinous rice paste into a shallow pan. (There is no shallow pan and other shallow containers can be used. The purpose of the shallow pan is to make the glutinous rice paste more heated surface and cook faster.)
7.
The surface is covered with plastic wrap. (Choose to use high-temperature plastic wrap) Steam for 30 minutes. (Put the lid on the pot, and start the timer after the lid is steamed).
8.
Steamed glutinous rice dough.
9.
Prepare a fresh-keeping bag, add coconut oil, knead the coconut oil in the bag until every corner is filled with coconut oil. (Coconut oil will form a crystalline state when it is lower than 25 degrees, and it needs to be melted in water before use) Steam the glutinous rice dough, remove the plastic wrap, and use a rubber spatula to move the glutinous rice dough along the edge as shown in the figure.
10.
Put the glutinous rice dough into a fresh-keeping bag coated with coconut oil. Knead the glutinous rice dough evenly through the fresh-keeping bag to make it taste better and softer.
11.
Use a rolling pin to roll the glutinous rice dough into a rectangle, as shown in the picture.
12.
Cut the fresh-keeping bag with scissors, spread red bean paste on the surface, reserve 1cm below without filling, and preheat 4~5cm above without filling, as shown in the figure.
13.
Roll up the glutinous rice dough from top to bottom, as shown in the picture.
14.
The rolled donkey rolls the embryo.
15.
Sprinkle cooked soybean flour on the surface, evenly.
16.
Use a sharp knife to cut into the size you like.
17.
Serve ready to serve.
Tips:
1. The water-milled glutinous rice flour cannot be replaced. The donkey made with ordinary glutinous rice flour will have a rough texture and become hard overnight.
2. Red bean paste can be bought ready-made, or you can make it yourself. You can refer to the recipe for black bean paste posted earlier.
3. Soy flour can be bought ready-made, or you can make it yourself. Stir-fry the soy and use a wall breaker or cooking machine to make flour. Sift it before use.
