Donkey roll is one of the traditional snacks in Old Beijing and Tianjin Wei. The soy noodles sprinkled in the final production process are like the waves of loess raised when the wild donkey Sahuan rolls in the outskirts of old Beijing. It is also very convenient to use a bread machine to make donkey rolls. You can directly add glutinous rice and water to make a very tasty glutinous rice dough. The outer layer of the finished "donkey roll" is covered with bean noodles, which is golden yellow and sweet with bean flavor. The entrance is soft and unique, and it is a traditional snack for all ages.

Donkey Rolling

1. First make the soybean noodles, wash the soybeans and put them in the bread machine to start the stir-frying work program. After 45 minutes, the soybeans will be cooked and fragrant.

2. Put the soybeans in the wall breaker and stir for about 1 minute and 30 seconds.

3. Soybeans are beaten into a fine powder for later use.

4. Soak the glutinous rice for about 3-4 hours in advance.

5. Drain the soaked glutinous rice, add water again and put it in the bread machine. (The amount of water is for reference only. The amount of water added is adjusted according to the water absorption of the glutinous rice when it is soaked.)

6. Start the bread machine rice cake program. After the program is over, the glutinous rice dough is ready. Cover the finished dough with plastic wrap and put it to lukewarm temperature.

7. Sprinkle soy flour on the kneading pad.

8. Put the lukewarm glutinous rice dough, sprinkle a layer of soybean flour on the glutinous rice surface, and flatten it.

9. Spread red bean paste on top of the glutinous rice dough.

10. Roll into long strips, spread soy flour on the knife, and cut into sections.
