Dried Fish Floss
1.
Wash the fish, make a few small mouths, spread the green onion, ginger, and garlic. Spread the cooking wine evenly. Put on the steamer and steam for 15 minutes. A chopstick can penetrate the fish body, indicating that it is cooked
2.
After the fish is cooked, pick the fish while it is hot. First remove the green onion, ginger and garlic. Pour out the steamed water in the bowl. Use chopsticks to remove the fish skin and the belly of the fish. Pick out the fish and place it on a plate.
3.
Crush the fish with a fish spoon and set aside
4.
Mix the soy sauce, salt, sugar and five-spice powder thoroughly and set aside
5.
The other steps are similar to that of pork floss. Heat the pan, add oil, add the fish to a low heat, and stir fry. During the stir-frying process, keep pressing the fish with a spatula to spread the fish.
6.
When the fish is half dry, add the sauce and continue to stir-fry, not more than 40 minutes, and be patient, you can stir-fry until it is crispy!
7.
