Dry Fried Octopus

Clean the hairtail. Pour in an appropriate amount of cooking wine, add chopped green onion, ginger, sprinkle an appropriate amount of salt, and marinate for more than half an hour.

Use absorbent paper to dry the marinated hairtail.

Pour the right amount of oil and salt into a non-stick pan. After the oil is 50% hot, put the octopus in the pan and fry slowly.

Turn the fish over after finding golden yellow on both sides of the fish.

Fry the other side for the same time. Out of the pot!

Tips:
1 Be careful not to turn it over immediately when frying the fish, at least two minutes later, otherwise the skin will be broken and the meat will be messed up. If you don’t have a good grasp of the time, you can turn it over a few more times after setting the shape.
2 The surface of the fish must be wiped dry, otherwise the oil will easily splash.
