Pour the donkey-hide gelatin that has been powdered beforehand into the pot, and pour the old rice wine in Jimo. Then stir well and brew for 24 hours. (It has been brewed with yellow wine for so long to make the effect of Ejiao fully exerted. Many unscrupulous merchants make it directly. In fact, that greatly reduces the effect of Ejiao.)

After brewing for 24 hours, pour the rock sugar that has been powdered beforehand into the pot and stir evenly.

Boil high heat until boiling, then turn to low heat. (Note: During the cooking process, a spoon must be used for constant stirring to avoid sticking to the pan)

The low fire has been boiled until the flag is hung (pictured). This step is particularly important for the production of Ejiao Cake. It is related to whether the rice wine is sufficiently volatilized. If this step is not done well, it is easy to make the Ejiao Cake soft.

Put the pre-weighed walnut kernel, jujube, wolfberry, and almond almonds in the induction cooker in a heat preservation state, and stir evenly. (Note: Do not add black sesame seeds at this time, otherwise it will be very difficult to stir)

Okay, now you can put the black sesame seeds that have been weighed in advance, but also note that there are more black sesame seeds, so put them in twice to reduce mixing difficulty.

After mixing well, you can put it into the plate prepared in advance (the square plate is covered with the prepared thick plastic film, which must be thick!
