Fancy Chopped Pepper Preserved Egg
1.
Place the preserved eggs in four on a plate, leaving a place in the middle for fancy cucumbers.
2.
Use a peeling knife to peel the long cucumber gourd, and then cut into long thin slices.
3.
Roll up the cut cucumber slices and place them in the middle of the plate.
4.
Add green onion, garlic, coriander and chopped pepper to abalone sauce, vinegar, sugar, salt and chicken powder. Sprinkle with high-temperature hot oil twice.
5.
Spread the chopped pepper sauce on the preserved egg and the side of the fancy cucumber, do not cover the surface of the cucumber to show the green flower-like arrangement.
Tips:
Some people will first steam the preserved eggs and cut them with a knife. For lovers of preserved eggs, this seriously affects the original umami and fluidity of preserved eggs. I would rather serve preserved eggs that look ugly, and I strongly oppose processing them after being steamed. The dishes are ultimately for the purpose of tasting food.
