Delicious Soup with Amaranth

Clean the amaranth roots and control the water.

Wash the shimeji mushrooms and cut into shreds, peel the preserved eggs and cut into dices, and cut the garlic cloves into shreds.

Heat water and a pinch of salt in a large bowl and place in the microwave for 3 minutes.

Take out a large bowl of boiling water and remove the dried amaranth.

Put 1 tablespoon of cooking oil in the wok, stir the garlic foam, add shredded shimeji mushrooms and preserved egg diced and stir.

Add proper amount of broth and pour it into a large bowl, add proper amount of salt and put it in the microwave, select microwave power for 5 minutes.

Take out a large bowl, add amaranth, stir and continue to microwave for 20 seconds.
Tips:
1. The amaranth is watered first to remove the astringency, and then the heating time should be controlled.
2. Heating with hot water can save time.
