Fancy Snowy Mooncake

Prepare the ingredients to be steamed in the pot

Pour powdered sugar and vegetable oil into the milk and stir evenly

Sift the steamed purple sweet potato into mashed purple sweet potato

Add the right amount of steamed batter to the purple potato mash, knead it well

Take an appropriate amount of glutinous rice flour and fry it (this one can prevent sticky hands)

50g moon cakes, 30g dough, 20g red bean paste, weighed and knead into balls

Dip cooked glutinous rice flour on your hands, flatten the dough, and put on the red bean paste

Spread hand powder on the inside of the mooncake mold, of course, the lid of the single piece also needs to be powdered

Tips:
1: The amount here can be more than 20 of 50g, you can increase or decrease as appropriate
2: When steaming the batter, be sure to wrap it with cling film to prevent the entry of water vapor and make the batter too sticky
3: The steamed batter is too sticky, just dip it with hand flour (hand flour is fried glutinous rice flour)
4: The purple sweet potato must be cooked in a microwave oven, so that the moisture will be less, and it will not be shaped when it is mixed with the dough
5: Put the finished mooncakes in the refrigerator for better flavor. If you can’t finish it at one time, you can also put it in the freezer, and put it in the refrigerator for a while before eating next time.
