Fermented Corn Dumplings
1.
Prepare ingredients.
2.
Mix the glutinous rice flour and corn flour evenly, then pour warm water into the flour, pour it into a dough with chopsticks, and then knead it into a soft and smooth dough.
3.
Take a piece of dough and knead it into a thin strip, making it as uniform as possible.
4.
Use a knife to cut into small pieces of the same size. If it feels sticky, you can sprinkle a little flour to prevent sticking.
5.
Take four to five small dough pieces, place them in your palms, and place them some distance apart.
6.
Use two hands to roll the dough into small rounds. Knead a few more together, faster, as long as a few small pieces of dough do not stick together, it can be rounded.
7.
Knead all the small balls one by one, and put some flour in the plate to prevent stickiness.
8.
Put an appropriate amount of water in the small milk pot, boil the water on high heat until it boils
9.
Put the kneaded ball into the boiling water pot, stir it when you just put it in the pot, to avoid the ball from sinking to the bottom and sticky.
10.
Cook on medium heat and cook all the small balls until they are all floating on the water.
11.
Pour the sweet fermented rice into the pot, and the rock sugar into the pot. Don't cook the sweet fermented rice for too long, not only will it destroy its nutritional value, but the fermented rice will become sour after cooking for a long time and taste bad.
12.
Pour a packet of lotus root flour into a bowl.
13.
Add appropriate amount of cold water, stir and melt the lotus root powder.
14.
Pour lotus root powder water into the pot and stir clockwise with a spoon while pouring. The lotus root powder must be melted with cold water first, if it is put directly, it will become a solid piece.
15.
Finally, put the pre-soaked goji berries into the pot and stir well before serving.
Tips:
1. The ratio of glutinous rice flour to corn flour is 2:1. If you like to eat corn flour, you can increase the ratio to 1:1, not more, because corn flour has poor viscosity and has a rough texture. If you like a delicate taste, reduce the amount of corn flour.
