Fig Jam that Chews Up

Wash fresh figs, peel and remove stalks, drain and set aside

Figs contain more sugar, the amount of rock sugar can be decorated as you like, squeeze lemon juice, and cut figs into cubes

Add rock sugar and lemon juice to the crushed figs, stir well and let stand for 2 hours until the pectin is precipitated

Put the pulp and the juice into the pot and heat it up. Note that it needs to be stirred continuously to prevent sticking to the bottom and to remove any foam on the surface during heating. In about 20 minutes, the jam begins to thicken, and you can add your favorite spices, such as cinnamon or vanilla. Continue to heat for 10 minutes, and the jam will take shape.

Pour the jam into a glass bottle sterilized by boiling water, cool it naturally, and put it in the refrigerator.
