Fish in Hot and Sour Soup

Prepare and wash all the ingredients for use. Separate the fish fillets from the fish bones.

The grass carp fillets are marinated with salt, soy sauce, cooking wine, chicken essence and pepper, and cornstarch. Add another egg white, stir well, and marinate for 20 minutes.

Heat a pan with cold oil, add ginger and garlic until fragrant, add sauerkraut and stir-fry for 1 minute

Move the sauerkraut to the side of the pot, add fish bones and fry until both sides are slightly yellow

Add some hot water

Add enoki mushrooms, boil and cook for 5-8 minutes. Add 2 tablespoons of rice vinegar, 1 tablespoon of sugar, appropriate amount of salt, soy sauce, cooking wine, chicken essence and pepper to taste.

Take out all the bottom materials and place them in a pot, leaving clear soup in the pot for easy cooking of fish fillets

Put the marinated fish fillets into the clear soup one by one without stirring to avoid the soup becoming mushy. Cook for 3 minutes and immediately come out of the pot.

Just add chopped green onion.
Tips:
To marinate fish fillets, you must add pepper powder and egg white rice vinegar. According to your personal taste, the cooking time of the fish fillets can be controlled within 2-3 minutes. It is too old for a long time.
