Fish Pumpkin Purple Potato Bun
1.
Mix 250 grams of flour with 2.5 grams of yeast powder, add the mashed purple potato, rub it with your hands while adding, and knead as much as possible. Add 60 grams of warm water to knead a smooth purple potato dough.
2.
Mix 250 grams of flour with 2.5 grams of yeast powder, add pumpkin puree, knead by hand while adding, and knead as evenly as possible to form a smooth pumpkin dough.
3.
After kneading the two colors of dough, cover it with a lid or plastic wrap, and leave it in a warm place to ferment to double its size.
4.
Dip your index finger with flour and poke a hole in the middle. The hole does not collapse or shrink, or you can see that the inside of the dough has become a honeycomb in the middle of the dough, and it will be fermented.
5.
Knead the fermented dough until the surface is smooth, and there are no obvious bubbles in the cut surface of the cut dough.
6.
Divide the dough into even small doses, take one portion, flatten it, roll it into a dough with a rolling pin, wrap it in the filling, close it, and wrap it into a circle.
7.
Continuously knead the dough to form a shape with tapered ends and a bit thicker in the middle.
8.
Fold the tail up, press lightly with your hand, cut it from the middle position with a knife, and press patterns on it.
9.
Cut a bite on the head with scissors and press out the lips with a small spoon.
10.
Use a small squeeze mold to stamp on the front of the fish head, embellish red (black) beans, and make fish eyes.
11.
Using a small spoon, start from the tail and press the pattern to make the scales.
12.
Pinch out a small strip on the back of the fish and use a clean comb to press out the dorsal fin.
13.
Cut one side fin on one side of the fish body and three on the other side, and stuff the red date shreds into the fish's mouth.
14.
Finish the fish of the two colors one by one, put them in the steamer, and let them rise for a second time for 20 minutes. Bring water to a boil on high heat, steam on medium heat for 15-20 minutes, turn off the heat, simmer for 5 minutes, then remove the lid.
