Fish Scales

Remove the fish scales from the fish skin, wash the mucus, prepare the onion ginger, pepper and white wine

The rinsed fish scales are soaked in clean water for more than 3 hours. Change the water midway, put the fish scales in the pot, add clear water to cover the fish scales, add pepper, green onion, ginger and white wine

Boil on high heat for 10 minutes, turn to low heat, and cook for about 3 hours

Remove the crimped scales and debris, and filter them into a container

Put it in the refrigerator to condense into a jelly shape, freeze the fish scales into slices, and put them in a plate

According to your preference, you can add garlic, vinegar, sugar, chili oil, light soy sauce, sesame oil and salt to make a sauce, add cucumber slices, and top with the sauce.
