Crispy Scales

Rinse and drain the scales from a grass carp weighing about three catties.

Add egg white, pepper, salt, pepper noodles, starch;

Mix well and let stand for a few minutes.

Boil the oil to six or seven heat, and pour into the fish scales;
5.
Scatter the fish scales, fry them on a low fire until golden brown, and then remove them.
