Crystal Fish Jelly

Prepare fish scales

Put the fish scales in a large bowl and wash them with clean water several times to remove the dirty stuff (this one is a bit troublesome)

Only the translucent scales are left

Put the fish scales into the pot and add water, the water is 3 times the fish scales. Add salt and shallots. Bring the ginger to a high heat and turn to a low heat and continue to cook until the scales are as white as paper and curled. You can see that there is no glue on the scales. Finally, the water is twice the size of the scales.

Remove the ginger, spring onion, and fish scales, leaving the scale juice in a bowl
