Fish Scales

Prepare the raw materials for cooking fish scales first, slice ginger, pepper, rice wine, fish scales.

Put the fish scales on the faucet and clean them.

Put it into the pot, add an appropriate amount of water, about 2cm above the scale of the fish.

Add pepper and ginger slices.

Then pour the cooking wine. Bring to a boil on high heat, turn to low heat and cook for about 15 minutes.

The scales of the fish will rise and the moisture will decrease.

Add some salt to taste. Turn off the fire.

Pour the scale water into the container and let cool.

Finely chop the green onions.

Finely chop garlic.

Put the shallots and garlic in a bowl, and pour a little fresh soy sauce.

Pour in a little sesame oil and mix well.
13.
Use chopsticks to gently pry the edges of the frozen fish scales to release the mold. Put it on the plate.
14.
Just drizzle with the prepared seasoning.
Tips:
Fish scales must be live-killed fish, otherwise the smell will be very fishy.
Pepper, ginger, rice wine, must be added enough, otherwise the taste will be very fishy.
