Fragrant Shredded Chicken
1.
Half a slaughtered earth cock.
2.
Prepare the ingredients you need, and mix the chili powder, Chinese pepper powder, five-spice powder, and fifteen-spice into a small bowl.
3.
Wash the chicken and put it in a pot of boiling water and add a little cooking wine and water to get rid of fishy.
4.
Remove the over-watered chicken and rinse with clean water to clean the foam, put an appropriate amount of water in the pot, add the chicken and ginger slices, cover and cook until it is broken and turn off the fire. (The time is about 10 minutes after SAIC)
5.
Do not remove the cooked chicken and let it soak in the soup for 20 minutes. Use this time to prepare the spices.
6.
Heat up the wok, add a little corn oil, and then add the dried red peppers with the seeds removed and fry until crisp and fragrant.
7.
Crush the sauteed dried red pepper.
8.
Put all the ginger, garlic, and chopped green onion into the pre-mixed bowl of chili powder.
9.
Heat up the wok, add corn oil and cook until 70% hot and turn off the heat.
10.
While hot, add the oil to the mixed paprika bowl and mix well.
11.
Take another bowl, add light soy sauce, seasoning salt, chicken essence, a little sesame oil, a little sugar, and then add an appropriate amount of chicken broth and mix thoroughly to form a flavored sauce.
12.
Add all the mixed chili oil to the sauce bowl.
13.
Mix well into red oil sauce.
14.
Take the chicken out, put on disposable gloves, tear the chicken into strips about 5cm long and moderate in size, and place them in a bowl.
15.
Add all the red oil sauce, and sprinkle the dried chili, chopped green onion, and coriander on the noodles.
Tips:
White sugar in this dish only plays a role in reconciling the flavor and cannot taste sweetness, so the amount of white sugar is only a little bit. If you like sweetness, you can increase the amount of sugar; other seasonings can also be adjusted according to your own taste. If you don't like spicy food, you can reduce the amount of chili powder; in a word, feel free.
