Fragrant Yellow Croaker

1. Small yellow croaker, be sure not to buy a big one, it is not easy to fry through, and it is not easy to taste, wash it and drain the water

2. Heat the ginger and oil together, but don’t heat the fish too high as it will scorch the fish easily

3. Put the drained small yellow croaker in a frying pan and fry until the two sides are golden brown and some are crispy. Make sure the inside and outside are fully fried

4. Drain the fried fish and let it cool naturally

5. Prepare a sealable container, pour the gravy, add the chopped red pepper and sugar, and stir well

6. Dip the small yellow croaker into the simmered bittern, and submerge the croaker as much as possible
