Fresh Abalone with Scallions

The shell of fresh abalone is peeled off, and the internal organs are removed.

Note that the butt of the abalone must be removed. Wipe off the black color around the abalone with a paper towel.

Change the abalone to a flower knife, soak up the water with a paper towel.

Cut purple onion into pieces.

Slice the garlic, slice the ginger, and cut the scallion into diagonal slices.

Put the oil in the hot pan, explode the abalone quickly, and remove it. note! Before putting the abalone into the frying pan, be sure to use a paper towel to absorb the moisture, otherwise the oil will splash and be careful of burns.

Leave the oil in the bottom of the pot, add green onion, ginger, and garlic after heating up, and fry it for a fragrance.

Add black pepper sauce, stir fry evenly, turn off the heat.
Tips:
The oil for fried abalone must be hot and fast. I use a lot of oil, so it takes about twenty seconds to get it out. Otherwise the abalone will be old.
