Fresh Hericium Mushroom Chicken Soup

The chicken is cleaned and set aside.

The Hericium erinaceus was broken into large pieces by hand.

Rub the Hericium erinaceus in clean water and wash it several times until the water becomes clear.

Squeeze the water in the Hericium erinaceus.

Add water to the pot and bring it to a boil, then pour the chicken into the pot.

Pour the Hericium edodes into the pot and add two slices of ginger.
7.
Cover the lid and cook on a low heat for 40 minutes.
8.
Turn off the heat and open the lid, add an appropriate amount of salt and stir evenly.
Tips:
The Hericium erinaceus should be washed and rubbed several times in clean water until the water turns white so that the Hericium erinaceus will not have a bitter taste. Not the dried Hericium erinaceus will have a bitter taste. Wash it a few more times. The fresh ones are better.
