Fried Crispy Pork Carp with Ginger and Spring Onion

The fish is cleaned with clean water and then cut into thin slices. If you want to make it easier, just ask the fishmonger to cut the fish. Then add salt, soy sauce and cooking oil to marinate for 15 minutes.

Add cornstarch to the fish fillets before cooking, mix well and set aside.

Chop the garlic, slice the ginger, cut the chives into sections, and cut the millet into small sections for later use.

Heat the pan with cold oil, add garlic and ginger slices and stir-fry until the aroma is achieved.

Add the fish fillets and stir-fry on high heat until 8 is mature. Pour a little white wine on the side of the pot to remove a little fishy smell.

Add soy sauce and oyster sauce and stir fry evenly. Don't put too much soy sauce and oyster sauce, because salt and soy sauce were added during marinating.

Add chives and millet and stir fry before serving.

Tips:
The fish fillets should be thinly sliced. If it is the belly part, it can be a little thicker.
