Fried Eggplant Slices

Two long eggplants, one green pepper, and half a spring onion.

Cut the eggplant into thick slices and put in water. One is anti-oxidation, and the other is less oil absorption when frying with more water.

Chop the green onion, garlic and green pepper.

Heat a pan and add some oil to fry the scallion chopped green onion and spring onion.

Add sliced eggplant and stir fry.

The eggplants are fried until this is done, and they can be simmered for a while with the lid on.

Cover and simmer for a while (about two minutes).
8.
Add a spoonful of oyster sauce, add salt, add five-spice powder, add green pepper and stir-fry.
