Fried Lotus Root Slices

Cut lotus root slices into thin slices, shred ginger, slice fatty meat (you can leave it alone)

The oil is 70% hot, (add a little more oil) and stir-fry the fat and ginger to create a fragrant flavor. Stir fry the lotus root slices. Add salt and don’t stop the shovel, otherwise the lotus root slices will burn easily. Fry for two minutes. When you feel that the lotus root slices are a bit dry, add a shovel of water and add five times, one shovel each time, so that the fried lotus root slices are crisp and color. It's also pretty, just sprinkle some chopped green onion out of the pot.
