Fried Noodles with Choy Sum and Egg
1.
Prepare all ingredients.
2.
Cut the ham into strips, break the eggs and scatter them, wash the choy sum and cut into sections.
3.
Boil an appropriate amount of water, put the next slices and cook.
4.
Fry the eggs while cooking the noodles: Heat the pan, add a little oil, stir the eggs evenly, pour them into a non-stick pan and fry them into egg skins.
5.
Remove and shred.
6.
After the noodles are cooked, pick them up and let cool water.
7.
Heat up the pan again, add an appropriate amount of oil, and stir-fry the ham for a while.
8.
Pour the choy sum and stir fry evenly.
9.
Pour in the noodles and stir-fry for a while.
10.
Add soy sauce.
11.
Add oyster sauce.
12.
A little chicken powder, stir fry evenly.
13.
Pour in the shredded egg, green onion, and mix well.
Tips:
The ham slices have a salty taste, and the soy sauce is enough, so there is no need to add salt for cooking. Stir fry the tender vegetable heart a few times, it will grow old if it takes too long to fry. The noodles are more chewy when cooked in cold water and will not stick together when fried.
