Fried Noodles with Poached Egg Sauce

I like to use a lot of ginger to fry the meat to get rid of the smell of the meat. Of course, if it is a good local pork, it is not necessary. After the meat is fried, the ginger slices can be fished out.

Fry a half-cooked poached egg, it must be half-cooked, so the pan should not be too hot during frying, and there is no need to turn it over. I always turn the fire on for a while and turn it off.
