Fried Octopus

Hairtail section bought back

Wash it with water, and then scrape off the white phosphorous layer on top. Some people can do it without scraping.

Marinate the washed hairtail with salt for 30 minutes

Mix starch and flour
5.
Add appropriate amount of water to make a paste, not too viscous

Dip the hairtail into the batter

Put oil in the pot and heat it to 50% hot, put the octopus in

Deep-fried golden brown on both sides
9.
Deep-fried octopus, crispy on the outside and tender on the inside
Tips:
1. The layer of white phosphorus on the hairtail does not need to be scraped off, I am used to removing it every time
2. I didn’t use egg liquid to paste it. I used flour and starch, so the fried crust is very crispy.
3. The washed hairtail must be marinated with salt before it will have a salty taste
