Fried Pork Skin

Boil in a pan under cold water for 5 minutes.

Take it out and let it warm, and use a blade to remove the hair, impurities on the outer skin, and the fat on the inner skin.

Boil water in a pot, add sliced ginger, star anise, cinnamon, pepper and cooking wine, simmer until the pig skin can be pierced with chopsticks, stop the fire, and then soak in the pot for more than half an hour.

Shred pork skin.

Cut the pepper into small pieces, and chop the garlic cloves into thick mince.

Pour oil in the pan, add minced garlic and pork skin and stir fry a few times.

Stir-fry the pork skin softly, add dark soy sauce, salt and fry a few times, add chili and stir-fry until the chili is cooked, add light soy sauce and stir-fry well.
