Fried Pork Skin

Usually, the pig skins that I save up by buying meat are frozen in the refrigerator, and when you save a certain amount, you can take them out for cooking. Put the pigskin in cold water, bring to a boil, and cook for about 5 minutes.

Remove the boiled pork skin. After putting it on your hands, scrape off the fat on the skin, and then use pig hair tongs to remove the pig hair on the surface of the skin.

The cleaned pigskin is washed several times with warm water.

Return to the pot, add ginger slices and star anise, and cook for about 15 minutes.

Cut the cooked pork skin into pieces.

Remove the seeds of the hot pepper and cut into pieces.

Fry small pieces of dried chili, chopped green onion and ginger.

Fill the pot with oil and heat, add green onion, ginger, chili, and stir-fry until fragrant.

Turn the heat to high, pour the pork skin, and stir fry a few times.

Add hot peppers and stir fry for a while.

Pour the light soy sauce.

Add a little dark soy sauce and stir well.
13.
Season with salt.

Stir-fry well.
