This year, I bought snails by myself for the first time. Some time ago, I looked at Tip of the Tongue 2, and it talked about eating snails. We all like to eat this kind of stone snails. They usually grow in rivers or fish ponds. , Because it has thick meat and no bitter taste, it is very popular with everyone. At supper, when three or five friends meet, come and have a serving, chatting and drinking beer, it is very pleasant

Fried Snails with Basil

1. The snails I bought have been raised for two days, and the water has been changed several times during the period. Now they are very clear.

2. Cut off the snail tail and rinse it off

3. Put the water into the pot, turn on the fire, and blanch it. When the pot is boiled again, you can remove it

4. All the small materials are ready to change the knife

5. In a frying pan, sauté the onion, ginger, garlic, star anise, and cinnamon

6. Pour the snails and stir fry

7. Put in the right amount of salt and sugar, it tastes very fresh

8. Add an appropriate amount of boiling water, just submerged

9. When the soup in the pot is almost dried, add pickled ginger, pickled pepper, perilla, and green pepper

10. After stir-frying, pour a little cornstarch water to make a thick gorgon. The gorgon does not need to be too thick, but not too thin. The juice should hang on the snail shell, but it should not appear thick. This degree should be controlled. it is good

11. Stir-fry well, out of the pot

Tips:

1. After buying the snails, it is best to raise them for one or two days, let them spit out the dirty things, and change the water and scrub from time to time.
2. The initial treatment of snails is to cut the tails of the snails, otherwise it will not be easy to taste, and secondly, you will not be able to enjoy the pleasant feeling of snails.
3. Some people don’t like to blanch the water before frying, but I think it is necessary to blanch it if you want to eat without the trouble of that layer of snail cover
