Fruity Oatmeal Cake

Prepare the ingredients you need.

Cut the winter melon sugar into fine pieces and set aside.

Mix all the sugar, apple sauce, yeast, whole egg liquid, and corn oil and stir evenly.

Add 150ML water and stir well.

Add flour and oatmeal.

Stir clockwise to form a slightly dry batter. (This can be stirred vigorously, not afraid of muscles)

Put the stirred batter into a mold six minutes full, and leave it in a warm place to ferment for about one hour. (I made this in the oven)

After the fermentation is complete, take it out, sprinkle the chopped winter melon sugar on the surface of the batter, shake it a few times (to avoid bubbles). Preheat the oven: fire up and down at 150 degrees for 20 minutes, turn off the fire at 15 minutes and only turn on the fire until it is finished.
Tips:
The winter melon sugar sprinkled on the surface can also be replaced with other candied dried fruits or nuts. I add jam to it, so the amount of sugar is reduced. If jam is not added, the amount of sugar should be 25g~30g. The baking temperature and time are for reference only, please adjust according to the firepower of your own oven.
