Garlic Ginger Spinach Tower

The garlic is mashed into a puree with a garlic mortar, and the ginger is rubbed into ginger with a tool (a kind of kitchen tool called a bed) for later use.

Remove the roots, wash the yellow and rotten leaves of spinach, cut into long sections, blanch in boiling water, remove them and put them in cold boiling water and set aside.
