Glutinous Rice Dates (the Heart is Too Soft)
1.
Soak the dates for one to two hours, and then use a knife to core them for later use.
2.
Add 3 tablespoons of glutinous rice flour to an appropriate amount of boiling water, knead it into a smooth dough with moderate hardness, and then knead it into a thin strip. (I forgot to take pictures T_T when kneading the noodles)
3.
The long dough is cut into small pieces with a knife and stuffed into the pitted red dates.
4.
Add appropriate amount of water (not too much water), a small piece of rock sugar, and red dates in the pot. After boiling, turn to medium-low heat and cook until the soup becomes thick. The time is about 20 minutes.
5.
Red dates are served, topped with broth and sprinkled with sesame seeds for garnish.
Tips:
When cooking, do not use too much water, otherwise it will take a long time for the soup to become thick. Rock sugar is added according to your own taste, because jujube itself is sweet, so it is not recommended to add too much. Also, if there is excess dough, don't waste it. Knead a few small balls, put them in and cook together, it's delicious!
