Cut the eggplant into quarters in parallel and bake in the oven at 200°C for 20-25 minutes, or until tender.

At the same time, in a bowl, mix the onions, garlic, tomatoes, salt, sugar, pepper and water and mash them with a wooden claw.

Add oil to the wok, pour in the mixed tomato paste, and heat until the liquid is reduced (about 10 minutes).
