Golden Shrimp Ball

Either fresh shrimp or sea shrimp can be used. Please pay attention to the operation method after washing it after buying it. There are two operation methods below. 1. After buying fresh shrimp, wash it and use a toothpick on the second to last section of the shrimp tail. Pick out the shrimp thread, and then peel off the shrimp skin, leaving only the tail. Marinate with white onion + shredded ginger + cooking wine + a little edible salt for 10 minutes 2. Peel off the shell of the shrimp and leave the tail. Use a kitchen knife on the back of the shrimp to gently draw the shrimp thread out. Use white onion + shredded ginger + cooking wine + a little edible Salt for 10 minutes

Peel and slice potatoes before steaming

Take out the steamed potatoes, put them in a container and mash them into puree. (If you find it troublesome, you can puree them with a food processor)

Take a plate and cover it with plastic wrap

Divide the mashed potatoes into the same equal parts of small ingredients, divide them into balls, put them on the plastic wrap, go to the middle of a small ball and press with your thumb

Put the marinated bottom into the hole, leaving the tail outside (I'm especially talking about my experience here, the size of the prawns can be selected, but I chose too large, not easy to stuff)

Take a small piece of plastic wrap and put the shrimp balls on the plastic wrap

Close the cling film and keep the tail outside of the cling film (use the cling film to create a good shape, you won’t get mashed potatoes everywhere)

Make all the shrimps one by one

Prepare other ingredients: bread crumbs (available in supermarkets) + 1 whole egg liquid + starch (corn starch, potato starch can be used)

Take a small shrimp ball and wrap the whole body with egg liquid (pay attention to put it in the egg liquid and quickly wrap it in the egg liquid, the mashed potatoes will become soft after a long time, which is not easy to operate)

Take out the egg liquid and put it in the starch to coat the starch

Put the whole shrimp ball covered with starch into the whole egg liquid again, and quickly coat it with the egg liquid

Wrap the egg liquid, remove it, and put it on the bread crumb tray, and evenly coat the bread crumb

Pour oil in the pot, heat 5~60%, put the shrimp balls, deep fry with low heat until slightly yellow, remove

For the finished product, I use it for deep-frying (if there is too much oil, you can use absorbent paper to absorb the oil). If you don't like deep-frying, you can use an oven or an air fryer.
Tips:
1. The operating sequence of putting the potato and shrimp balls into the oil pan: wrap the egg liquid-remove the starch coating-remove the egg liquid again-remove the bread crumbs-put the oil in the pan.
2. If you don't like frying, you can use the oven (upper and lower fire 170℃ for 10 minutes, depending on the temperature of your own oven) or air fryer.
