Grilled Chicken with Mushrooms

Pluck the whole chicken and remove its internal organs

Soak and wash the shiitake mushrooms

Slice shiitake mushrooms, shred green onion and ginger, and set aside garlic

As shown in the picture, soy sauce, edible oil, green onion ginger, minced garlic, and a small amount of salt marinate for half an hour.

Heat the oil in the pot as shown in the picture, pour the oil into the light soy sauce, add the mushrooms and stir fry until fragrant

Fill the chicken belly with shiitake mushrooms as shown

Pour oil into the pan as shown in the picture. Heat the oil and add the chicken. Fry until the skin is golden and turn to the other side, until the whole chicken is golden brown.

Pour the broth of the freshly marinated chicken as shown in the picture until the broth becomes less viscous.

Add the water for soaking the mushrooms, pepper, aniseed, bay leaves, cinnamon, cloves, and fennel seeds to a boil over high heat as shown in the picture. Turn to low heat and simmer for 1 hour. Turn over and continue to simmer for 1 hour.

Tips:
1. The whole chicken should not be too big, preferably within 2 catties. 2. Don't pour the water for soaking mushrooms, it will be used when stewing. 3. Onion, ginger and garlic can be more appropriate. 4. The stewing pot at home is relatively small, so you can turn the chicken over halfway to make it easier to taste.
