Grilled Octopus

Wash the hairtail, add salt, ginger, spring onion, cooking wine, and pepper to marinate for more than half an hour.

Coat the marinated hairtail with dry flour.

Heat the pan with cold oil and fry until both sides are yellow and crisp.

Fry and serve.

In a separate pot, add green onion, ginger, star anise and peppercorns until fragrant.

Add chopped pepper and stir fry until fragrant.

Add fish, water, pepper, soy sauce, Huadiao wine, and a small amount of sugar to simmer over high heat. Don't cover the pot, so the smell will escape.
8.
Add water and starch to collect the juice when the soup is getting less.
9.
Sprinkle a small amount of green onion to add color.
