Frozen old brine (because the bittern contains more gums, it will not freeze into ice slag when frozen)

The oily tofu skin is soaked in water and folded twice into a pillow shape (if you want a thicker one, you can fold it again)

Poke a few toothpicks to keep their shape (it turns out to be unnecessary) and place them in a pan. Add brine, sugar
4.
Turn over after the brine melts. Cook each side for 1 minute to remove and slice without cooling
