Summer is here and I really want to eat a bowl of refreshing noodles. Simple and hygienic, the best noodles made in-house, without any additives. The noodles relax, go shopping or chat, boil water when you want to eat, and make the ingredients sour and spicy. High-gluten flour water is as simple as that, and you can get a bowl of your own brand of noodles.

1. Put the water and salt into the bread machine to melt, and add the flour.

2. Set the kneading program for about 30 minutes

3. Take out the kneaded noodles and wrap them in plastic wrap to relax about 1 small

4. Loose dough, knead it into a cylindrical shape

5. Cut noodles of the same size

6. Knead it into a dough, roll it into an oval shape, press it with a rolling pin on the rolled dough

7. The thickness of the dough is basically the same as that of the cake (about 1cm)

8. Brush the plate with vegetable oil to prevent the dough from sticking to each other.

9. The finished dough must be wrapped in plastic wrap and do not let air into it. Relax again for 30 minutes or an hour, and the dough with a long relaxation time is better to pull

10. The loose noodles are very soft and deformed when taken out

11. Pinch the two edges of the dough, shake it lightly, it will look like the picture

12. The stamp in the middle of the noodle dough becomes thinner, tear it open by hand, and the noodle becomes thin (the following steps should be done next to the pot, to take a photo, pull the noodle on the noodle table)

13. Squeeze one end with one hand, and gently pull the noodles with the other. It will become thinner and thinner. Just pay attention to the evenness. When doing this step, boil water to prepare the following strips

14. According to personal preference, draw into wide strips or thin strips

15. While pulling, boil the noodles in the pot and boil it for 3 minutes. According to personal preference, add sour to make lemon juice, old vinegar, chili sauce and so on.

Tips:

1. The dough should not be too soft. The longer the relaxation time, the gluten of the noodles will be larger and the taste will be better.
2. The finished dough. It must be wrapped in plastic wrap, and no air may enter to avoid hardening of the dough. It broke when ramen.
3. When pulling noodles, approach the pot and cook while pulling them. If the noodles are stretched very long, they can be wrapped around one hand.
4. Don't over-cook, boil one piece in a pot under the water and remove one piece of noodles. The water will be cooked in about three minutes.
