Hawthorn and Lotus Root Slices

Wash the lotus roots, peel them, cut them into thin slices, and soak them in cold water for about 20 minutes

Wash the hawthorn, remove both ends, then cut the hawthorn into two pieces to remove the core

Add water to the pot and bring to a boil, add the lotus root slices and blanch for about 1 minute, remove and set aside

In a separate pot, add the hawthorn and rock sugar, and add some water. The water should not be too much if there is more water than the hawthorn

Boil the hawthorn until soft and the soup becomes very thick.

Add the blanched lotus root slices to the hawthorn, mix well and serve it on a plate. Let it cool and taste better.
Tips:
The lotus root should not be blanched with hot water for too long, so as not to affect the crunchy texture. When cooking hawthorn, you don’t need too much water, otherwise it will take a long time
