Hawthorn Cake

Wash the hawthorn with water

Cut the hawthorn and remove the stalk and core (however it is convenient)

Pour hawthorn in the pot, add water and lemon juice, cover the pot and cook until the water boils and turn off the heat for 4 minutes.

After four minutes, it has become soft. Pour it into a food processor and mash it, and filter it with a mesh sieve if you want it to be fine. (Note: If you don't have a cooking machine, you need to cook a little longer before pressing it into mud.)

The steps of stirring were not photographed. Because the phone is dead. After mashing it, pour it back into the pot and add white sugar and rock sugar. Stir it while cooking. Don’t stop it, otherwise it will become sticky. Stir until there is resistance and it is not easy to drop when lifted up. This is about 35 minutes.

To make a roll, pour the prepared hawthorn puree on a flat plate or on plastic wrap. Just spread it out in a thin layer, and roll it up and cut it when it's dry. Note: Don't be too thick or it will crack.
