1. Wash the hawthorn and put it in a boiling pot, add water to the hawthorn.
2. Bring to a boil over high heat, then simmer on low heat until the hawthorn softens and the skin is cracked.
3. Press and crush the hawthorn with a spoon, add rock sugar (at least 100 grams of rock sugar in 500 grams of hawthorn, otherwise it will be too sour), and cook for about 5 minutes.
4. Filter out the juice.

Adjust the amount of rock sugar according to the amount of hawthorn and your own preferences. I used a pound of hawthorn and put 150 grams of rock sugar, which tasted good.
