Hemp Group
1.
500 grams of glutinous rice flour, 50 grams of flour, 75 grams of white sugar, 300 grams of jujube paste filling, 100 grams of peeled white sesame seeds, and 2000 grams of vegetable oil (about 200 grams).
2.
Preparing: Put glutinous rice flour, flour, and white sugar in a basin and stir well. Pour one-fifth of 50 grams of boiled rice noodles in boiling water, add the remaining rice noodles to 200 g of cold water while it is hot, and knead the boiled rice noodles evenly to form a smooth dough. Wake up for 40 minutes. (Long winter time)
3.
Dividing: Divide the good dough into 20 grams of dough; divide the jujube paste into 10 grams of dough.
4.
Forming: Press the dough into a round blank with a thick middle and a thin edge, put a jujube paste filling in the center, and close the mouth and knead it into a spherical shape.
5.
Glue the rounded hemp ball evenly with white sesame seeds, and serve as a raw hemp ball.
6.
Cooked: Put the pot on the fire, add vegetable oil, burn to 30% heat, and add hemp balls. While frying, roll out the green body with a spoon to expand it. When it floats to the oil surface, increase the oil temperature and fry it until the product is golden brown.
7.
Put the finished hemp balls on the plate.
Tips:
1. The hardness of the rice flour dough should be moderate. If it is too hard, the product is easy to burst and open; if it is too soft, the product is not easy to form.
2. After the dough is made up, it should be placed for a period of time before forming.
3. When frying, the oil temperature should be controlled at 2 to 30% heat. Use medium and small fire power, and the oil temperature should increase slowly from low.
4. The filling can use other raw materials, such as jujube puree, lotus paste and so on.
