Homemade Jujube Spring Rolls

Homemade jujube paste filling is ready

Take one of the cornmeal pancakes from my relative’s stall, open it

Spray a proper amount of water mist on the surface to make the pancakes damp and soften slightly

Cut the softened pancakes into squares and stack them together to prevent them from drying out and becoming brittle

Take a pancake crust and put an appropriate amount of jujube paste in the middle

As shown in the picture, fold the lower corner close to the body

Fold the left and right corners to the middle

Fold it up again, and the remaining corner is also folded. Such a spring roll is ready

Make the remaining spring rolls one by one

Heat the oil in a flat-bottomed non-stick pan, add the cooked spring rolls, and fry them on medium heat.

Fry on one side until golden brown and crispy, then turn it over, and just fry on both sides. Because the pancakes and fillings are cooked, the frying time is very short, about one minute per side is enough.

Tips:
When frying, the fire should not be too small, because the fire is small and absorbs more oil. Be sure to watch the pan when the fire is high, and don't fry it. The spring rolls themselves are cooked and can be fried in two or three minutes
