Homemade Natto

First wash the soybeans and soak in water for 12 hours. Add 2g of sugar and 1g of monosodium glutamate to the soaked soybeans, mix well, and steam them in the pressure cooker. I use the beans of the electric pressure cooker.

The steamed soybeans are taken out and allowed to cool to about 45°C, and the natto bacteria will be inoculated.

Open the natto capsule, use a toothpick to pick out 1mm*1mm natto bacteria powder, and mix it with 2ml of purified water to form a bacterial solution

After mixing the bacteria liquid with the steamed soybeans, the fermentation can begin. I use a natto machine. If you don’t have a natto machine, you can cover it with a layer of gauze on the surface of a breathable container and leave it to ferment in a warm environment.

The temperature is relatively high in this season. The first fermentation is completed after 10 hours. You can see that a white film is formed on the surface of the soybeans. Stirring the soybeans with a spoon can see obvious wire drawing, and you can smell the aroma of the beans after fermentation.

The natto that has been fermented for the first time should be placed in the refrigerator for secondary fermentation for 12 hours. Find a large clean container, seal the bowl with plastic wrap, and then use a toothpick to pierce some small holes in the plastic wrap (to provide oxygen for the secondary fermentation, and to absorb Bean bacteria are trophic bacteria)

After the second fermentation is completed, the white film on the surface of the natto becomes transparent, the drawing becomes more obvious, and the drawing becomes very strong! Then you can find a sealed container to store it, and take it when you eat it. It can be stored for about a week.
Tips:
Natto is a very good beauty and health product, but there are also skills when eating it! Nattokinase, which works in natto, will be inactivated in an acidic environment, so try not to consume it on an empty stomach to prevent stomach acid from damaging it.
