Tofu brain used to be eaten outside and had to travel far and wide. After I mastered this skill, I realized that the whole family loves this. It is really the favorite. There is no one. This can be said to be my breakfast. I make the most frequent one, and I eat up every time I make it. The tofu made by myself is super tender and delicious.
Sometimes I not only lament that it is so happy to be able to eat such delicious tofu at home. Haha tofu brain is the most suitable to eat in summer. The taste can be sweet or salty. The sweet can be directly added with sugar. The salty and convenient method is also very fast, directly add light soy sauce and mustard.
It is very good to have steamed buns with steamed buns or fried dough sticks and glutinous rice pancakes for breakfast.
In my hometown, every summer afternoon, there will be people selling tofu nao and pushing a car to sell them. Every time I pass by my door, I have to come up with a bowl. I like to add some sugar and let it cool as a dessert. It tastes cool in summer. It's satisfying, and eating this will reduce the fire.

1. Soak the soybeans in cold water one night in advance. After soaking, rinse and remove for later use. Use another container to take 1200ml of cold water.

2. Find a large container and pour the soybeans and water into the juicer. Use a large spoon to scoop the soybeans and water into the juicer to make soy milk. It is best to make sure that there are beans and water in each spoon.

4. After the soy milk is ground, prepare the sieve and cloth, spread the cloth in the sieve, put a container under the sieve to receive the filtered soy milk, and then pour the soy milk into the filter, which is equivalent to filtering twice. I use it during operation. It is the filter and container of the soymilk machine (it is the kind of large measuring cup, which is the container with water in the picture in step 1)

5. Pour the filtered soy milk into a pot and heat it over medium heat, preferably without a lid

6. When heating, prepare the internal fat. I used the one shown in the picture. A small pack is 3 grams.

7. Take a small packet and put it in a bowl, then pour 10ML of cold boiled water and stir with a spoon until the internal fat is melted (10-20ML of water is fine, as little as possible, otherwise there will be too much water in the tofu brain)

8. Heat to boiling and turn off the heat. Do not leave the kitchen while heating. Once the soy milk is boiling, it is easy to overflow, so I usually don’t have the lid for observation, as shown in the picture, I need to turn off the heat immediately.

9. Turn off the heat and let it stand for two minutes, then slowly pour the melted soy fat into the soy milk, pour in the left hand and stir with the spoon in your right hand. Stir a few times and then counterclockwise for a few times. Soy fat is fully fused with soy milk, after stirring, cover the lid and wait for it to form

10. After opening it in six or seven minutes, it is already formed and very tender. The forming of tofu brain is very closely related to the temperature. If your soy milk is different and the time is slightly different, it is generally recommended to open the lid and gently lift the side of the pot to observe whether it is formed. If it is not formed, you need to cover it again. Let it stand, and after it has formed, you can take it out and enjoy it. On the contrary, it will be older if it takes too long.

11. Next, make the marinade for the tofu brain. The auxiliary materials in the ingredients are the ingredients for the marinade. The meat is chopped, the green onions are cut into chopped green onions, the dried bamboo shoots, mushrooms, bell peppers, and ginger are sliced.

13. Add half a spoon of soy sauce, one spoon each of light soy sauce and old wine, chicken essence and salt, stir-fry for a minute and add water. The water is a little bit over the dish. Taste the saltiness yourself. Tofu nao is a light marinade. It's better if it's salty

14. After the water is boiled, cook for another two minutes, add starch water to thicken, cook for two to three minutes, and then it will be out of the pan. Sprinkle with chopped green onion after the pan is out. The starch water does not need to be too thick. You can use it on tofu. The dried bamboo shoots can also be replaced with black fungus, which is also very delicious. If you don't want to make marinade, you can just chop the mustard greens and add some light soy sauce.

15. The leftover bean dregs from making tofu can be fried into bean dregs cakes by adding flour, eggs, green onions and seasonings, and start enjoying a delicious breakfast with tofu brains.

Tips:

1. Many people ask whether it can be made with a soymilk machine. I would like to say that it is best to use a soymilk machine. The juice yield of the soymilk machine is different, and the capacity of the soymilk machine is not so large. It may need to be divided into two to complete
2. Do not change the recipe of beans and water, otherwise the tofu brain may be sour
3. Regarding the dishes in the marinade, you can add them as you like
