Hot Noodle Scallion Pancake

250g plain flour in a basin

Pour in boiling water and stir well, then add in cold water and knead it into a slightly rough dough.

Cover it and wake up for at least half an hour.

Make shortbread when the noodles are awake, put the shortbread ingredients in a bowl, and stir evenly.

Put the awake dough on the kneading pad and knead it into a smooth dough.

Divide the dough into 6 equal parts.

Take a portion of the dough and knead it into a round shape, spread it with shortbread, sprinkle with chopped green onion, fold the dough in half, roll it up from top to bottom, then stand it up, and flatten it.

Use a rolling pin to roll into a round slice.

Heat a pan, add a little oil, put the cake in, turn the heat to a low heat and cook slowly.

Turn the other side when the bottom surface is golden.

The golden brown on both sides can be out of the pot and plated.
Tips:
1. It feels sticky when kneading in the basin, it doesn't matter, just knead it into a ball.
2. It is better to sprinkle some flour on the kneading pad when rolling.
3. Turn the pancakes frequently, so that the heating will be even.
