The little golden hook, with the most natural umami from the ocean, complements the emerald green rapeseed. There are tricks to making simple dishes.

Kaiyang Small Rape

1. Wash the shrimps with water and drain, the water on the surface will moisturize and soften the dried shrimps

2. Break the leaves of the small rapeseed, wash and drain

Tips:

1. Haimi is also called Jingou and Kaiyang. It is sea prawns that are peeled and dried. When you buy them, they choose sweet and sun-dried ones, but they don’t have salt. They are very fresh when they are cooked and dumplings are used in soup. It's very good, it's only 1 cm big, and it was bought by my mother specially for me;
2. Wash the sea rice with water first, and avoid being too dry and the taste will not come out;
3. The small rapeseed must be blanched in boiling water, and then cooled immediately, so as to reduce the time of frying and help maintain the color and nutrition;
4. Saute the fragrant sea rice with oil first to remove the fishy. Sauté the garlic until fragrant, and be careful not to paste it. These two are particularly flavourful and go well with small rapeseed;
