Kaiyang Winter Melon

Prepare the ingredients: winter melon and Kaiyang (that is, dried shrimp)

Rinse Kaiyang and soak for 5 minutes, remove and squeeze out the water for later use

Peel the winter melon and cut into thicker slices

Ginger strips and chopped green onions

Heat the oil in a pan, add the kaiyang and ginger sticks to a small fire and stir fragrantly

Add the winter melon (lightly to prevent splashing of hot oil)

Add salt

Stir-fry for a while, pour in half a bowl of water, cover the pot and cook on medium-low heat until about a quarter of an hour

The winter melon is transparent, pour in fresh soy sauce, turn to high heat to collect the thick soup

Finally, sprinkle in chopped green onion and stir-fry to serve.
Tips:
1. It will be more fragrant if it is fried and dried
2. During the simmering period, you can turn it over from time to time to prevent the pan from sticking.
