Lamb Chops and Cabbage Vermicelli Soup
1.
Wash lamb chops and chop into long sections.
2.
Wash the cabbage and tear it into large pieces by hand.
3.
Add water to the pot, add star anise, bay leaves, and cinnamon (to remove the peculiar smell of lamb chops).
4.
Boil the lamb chops after the water is boiled.
5.
Remove the blanched lamb chops and set aside.
6.
Wash the vermicelli with cold water.
7.
Start another pot, add enough water to the pot, add red pepper, ginger slices, green onions, and lamb chops.
8.
Pour in the cooking wine, mainly to remove the mutton smell. After it is boiled on high heat, change to low heat and cook for about 30 minutes.
9.
Put in the torn cabbage slices (first put the cabbage gang and then the cabbage leaves).
10.
After boiling for 10 minutes, add a little salt, add the vermicelli, and cook for a while.
